The boys play baseball in Arizona events 4-6 times per year. USSSA, Perfect Game, USA Baseball and many more. There is one food joint that we never miss… often eating there at least twice, Greek Wraps in Peoria.

On a bed of rice pilaf, they place skewers with juicy steak and chicken cubes. This is our version of Greek Wraps, and it was a special request by birthday boy Dylan.

Ingredients:
Greek Grilled Chicken Skewers
⁃ 3-4 lbs skinless chicken breast (cubed)
⁃ 3 Lemons (juiced)
⁃ 3 TB Olive Oil
⁃ 3 TB Parsley (chopped)
⁃ 3-4 Garlic Cloves (finely chopped)
⁃ 1 TS Smoked Paprika
⁃ 1/2 TS Dried Oregano
⁃ 1/2 TS Kosher Salt
⁃ 1/2 TS Black Pepper
⁃ Optional: Veggies (we cubed squash & zucchini and tossed in olive oil, salt, pepper & dried oregano)

Rice Pilaf
⁃ 4 TB Butter
⁃ 1 CP Orzo
⁃ 1/2 Onion (diced)
⁃ 4-6 Garlic Cloves (minced)
⁃ 1 CP Rice (long grain)
⁃ 4 CP Chicken Broth
⁃ 2 TS Turmeric
Directions
Four hours ahead…
1. Cut chicken into cubes
2. Whisk the other ingredients and mix well with chicken.
3. Marinate in fridge for 3-4 hours.
4. Soak skewers in cold water.
(You’ll need extra marinade if you’re grilling other protein. I used large 26/30 deveined shrimp.)
One hour ahead…
1. Melt butter over medium low heat.
2. Sauté orzo for 1-2 minutes.
3. Sauté onions for 4-5 minutes.
4. Sauté garlic for 1 minute.
5. Sauté rice for 1 minute.
6. Pour in 4 cups broth. Mix well. Bring to boil, cover, and simmer on low for 20-22 minutes.
7. Remove from heat and fluff with fork after 5 minutes.
Almost done…
1. Grill skewers for 3-5 minutes per side (7-10 minutes total).
2. Serve with warm pita (you can grill) and hummus.
